Pahi Oyster Chowder with Sourdough

The Gumdigger’s Café, Kauri Museum

Kaipara kaimoana is key to this delicious chowder. Gathered from the small Kaipara seaside village of Pahi, the oysters in this dish are from the salty water viewed from the windows of the Gumdigger’s Cafe.

The oysters are sliced and added to a creamy, garlic butter sauce, thickened with Kaipara Kumara, and seasoned with paprika and cayenne pepper. The Chowder is drizzled with Lemon Olive Oil from Chapel Oil – situated directly in view across the river from the Café – and served with a with a slice of homestyle sourdough bread.
