Waiata Kawa Reka

A take on a classic bittersweet Negroni, Waiata Kawa Reka (bittersweet symphony) combines Black Collar Gin, with 144 Islands sweet vermouth, made with extracts of native New Zealand botanicals including Totara, Kahikatea and Manuka flowers. Combined with 144 Islands Kawa, a bitter aperitif made from local Kerikeri Valencia Oranges, and 144 Islands Amaro, an aperitif made using Kauri, Rimu and Pohutukawa Barks. Garnished with a strip of sprayfree Kerikeri orange peel.

Savour the taste of Northland with our locally-sourced, sustainable ingredients. Our premium kingfish is expertly pan-seared and sourced from Ruakaka. It is accompanied by harissa-spiced rainbow carrots, the harrissa produced through the Fallow Grounds initiative, from Northtec, which repurposed unutilised land between avocado orchards to grow and harvest chilies. These vibrant vegetables pair beautifully with new potatoes and fresh herbs, all gathered from Leftfields in Waipu.  a herb-stuffed, pan-fried zucchini blossom and a creamy Belle Chevre goats' labneh, also from Waipu finishes this dish

Waipu’s Belle Chevre Creamy Goat’s Cheese with Lemon Curd and Lavender. A smooth and creamy goat's cheese from Waipu's Belle Chevre, paired with tangy lemon curd, delicate lavender notes, and a crispy malt crumb for texture. Drizzled with locally sourced honey for a touch of sweetness, this dish brings together vibrant Northland flavours in a harmonious blend.
