We’ve taken a tender Northland lamb leg from Omak Meats and treated it right—slow-roasted to perfection after a generous rub with Stef the Māori’s cheeky “Rub One Out” spice blend and a splash of The Landing Port. It’s finished with a nutty macadamia pesto using locally grown macadamias from JC Nuts in Kerikeri, and a punchy onion and tomato chutney for that sweet and tangy edge.

Pair it with our flirty cocktail made with Northland’s Black Collar Spiced Rum, fresh grapefruit and citrus juices, and a house-made Manuka honey syrup, shaken and crowned with a rosemary and lime zest foam.

Bold, playful, and just the right kind of trouble, this duo’s guaranteed to heat things up.
