Smoked Haku Kingfish Rillette & 144 Islands Coco Maeve Rose

We’re all about using every bit of the fish here at Schnappa Rock, that’s why our smoked Haku kingfish rillette is made from heads, cheeks, wings and frames, giving you big flavour without waste.
The rillette is smoky and rich, paired with crunchy Dargaville kumara chips, sharp cornichons, a sprinkle of dukkah for texture, and fresh micro herbs from our garden for a bit of green.
This dish is matched with 144 Islands Pinot Beurot, a vibrant, fruit-driven wine from our local vineyard. The wine’s bright acidity and delicate spice cut through the richness of the rillette, making for a balanced and satisfying pairing.
It’s a true taste of Northland — from the sea, the garden, and the vineyard, all coming together on one plate.
