Ruawai Sausage and Kumara Pie

The Gumdigger’s Café, Kauri Museum
Celebrate Kaipara kai with our hearty homestyle pie. Ruawai Sausages were named in the 1950s and this 70-year-old recipe has been nourishing generations of Northlanders. Distinctive in flavour and texture, for decades the Ruawai Sausage has been paired with humble Kaipara Kumara, the locally Northland-grown sweet potato.
In this dish the Ruawai Sausages are sliced and browned with mushrooms, then added to a rich gravy accented with a tangy caramelized onion relish. The pie is topped with a cheesy Kaipara Kumara mash, then grilled until golden. Bringing together this natural pairing in a contemporary and distinctly Northland way, this hearty dish is from the heart of Kaipara, pure Northland and spectacular in its simplicity.
