Pāua, Potato & Chardonnay

Schnappa Rock, Tutukaka
This dish is all about Northland flavour
We start with baby blue pāua from Ruakākā, cooked with a touch of Omaks bacon, Northland cream, and herbs from our garden. It’s mixed through mash, rolled into balls, panko-crumbed and fried. Crunchy outside, creamy inside, smoky and rich but still light.
Alongside it is a dill and Chardonnay mousse made with The Landing Chardonnay — smooth, fresh and a little bit tangy — served in the pāua shell as a nod to where it all started. Finished with Tutukaka lemon and our garden micro herbs.
A glass of the Landing Chardonnay on the side is the perfect match with the pāua. It cuts through the richness and brings everything together.
