Northland’s Greek Moussaka with Tangelo, Saffron & Rosemary Soda

This dish is a celebration of Northland’s produce, prepared with care and tradition. At its heart is a classic Greek Moussaka, with local ingredients and bold flavour. Tender beef mince from Omak Meats is slow-cooked and layered with golden potatoes, silky eggplant, and a rich, creamy béchamel sauce. Each bite balances savoury depth with comforting warmth, offering a taste that’s both homely and refined. On the side, a crisp green salad from Leftfield brings freshness to the plate, brightened by the striking crunch of Nadia’s Garden watermelon radish.

To accompany the dish, is a handcrafted soda that’s as refreshing as it is unique. Zesty tangelo from Nadia’s Garden is blended with aromatic rosemary from Leftfield and the subtle luxury of saffron, resulting in a drink that’s bright, fragrant, and perfectly balanced.
