Northland Kumara Celebration Dessert paired with PhatHouse Midnight Espresso Coffee Stout

Created by our award-winning chef Aaron Stott, this dessert is a true celebration of Northland’s culinary treasures, with the humble kūmara taking centre stage. Known as one of the region’s most iconic ingredients, kūmara from Dargaville provides the foundation for this indulgent dessert, offering both natural sweetness and striking colour that reflect the richness of the land.
To enhance its depth of flavour, Aaron pairs the kūmara with carefully chosen local ingredients including, HoneyMoon Valley Bush Honey, harvested by Maccabees Far North Honey adding a fragrant floral sweetness, while Bella Vacca Jerseys cream from Kawakawa enriches the dish with luxurious smoothness. Shady Grove Olive Oil, grown in Pakaraka, contributes a soft, fruity note, complementing the earthy kūmara, and free-range eggs from Marangai Farm in Haruru provide both structure and balance, binding these regional elements together.
The dessert itself is a golden butter-fried kūmara bread, gently spiced and caramelised to bring out the root vegetable’s warmth and character. It is topped with a creamy tangy kūmara frosting, sweet cubes of purple kūmara and a scattering of zesty freeze-dried mandarins and drizzled with honey caramel sauce, while crunchy caramelised white chocolate crumbs add texture. Served with a generous scoop of coconut vanilla yoghurt, the result is a dessert that is deeply Northland.
These rich flavours are complemented perfectly by PhatHouse Midnight Espresso Coffee Stout brewed onsite in Haruru using Russell based Tohora Coffee, for a truly decadent experience.
