Seared Yellowfin Tuna with Avocado & Microgreens
Locally caught yellowfin tuna from the deep waters off Northland is expertly seared by Chef Tana, a proud local. The dish features creamy avocados grown by the chef’s uncle in Te Kao, complemented by house-made mayonnaise crafted with free-range eggs. It’s finished with microgreens from Jani’s organic, pesticide-free garden in Backriver, adding freshness and texture.
Wine Pairing: The Landing Pinot Gris
This dry, full-bodied Pinot Gris offers pristine fruit flavours with aromas of ripe pear, citrus, and roasted hazelnut—an ideal match for the richness and balance of the tuna dish.
