Māha Shabu Shabu and The Landing Chardonnay 2023

Shabu Shabu (a Japanese style of hotpot) is the best way to enjoy this highly marbled beef (MB8+). Shabu Shabu mean “swish swish” – the sound of the thinly sliced meat passing through the simmering broth. The tonkotsu (bone broth) is made in house – it is opaque, creamy in texture and delicate in flavour. As you cook the meat in the broth, the fat melts away so cooks quickly. Then dip the cooked meat into the soy, add a touch of jalapeño and yuzu and savour the delicate flavour and mouthfeel of the beef. Take a spoonful of broth and taste the smoky creaminess of the tofu.
Shabu Shabu of 100% Wagyu Scotch fillet, tonkotsu broth with house smoked tofu and Northland oyster mushrooms; Kerikeri yuzu, wakame, white soy, local japaleño.
This is experiential and immersive dining – experiment with how long you poach the meat in the broth, how much of the sauces you use, when you sip on the broth.
The wine match journey starts with enhanced citrus notes, then the smooth rounded oak character, a smoky layer is added from the tofu, the mushrooms bring out the vanilla from the oak and the final mouthful of the rich broth brings out the subtropical notes in the wine.
The Landing Chardonnay 2023 is crisp, with notes of citrus and subtle subtropical fruits, and well rounded with layers of flavour and acidity in perfect balance.
