Kingfish Crudo

The Gables Osteria & Enoteca, Russell
For our Perfect Pairing we have decided to showcase some stunning Northland Kingfish. The Kingfish has been cured with some of 144 Islands white vermouth, and is served in a classic Italian crudo style.
With our Kingfish we are serving pickled Kerikeri pear, an orange & pink peppercorn vinaigrette and then finishing with some parsley oil & crispy skin.
To serve with our Kingfish we have paired a glass of the 144 Islands 2024 ‘Coco Maeve’ Rose. This beautiful Syrah based rose has a fresh acidity that marries so well with the cured fish, while its notes of citrus blossom, peach & fresh herbs match up perfectly to the rest of the dish.
