Bittersweet Northland Harvest

As the reigning Supreme Champions of the 2024 Savour Northland Challenge, we return this year with another inspired creation that honours Northland’s land, produce, and spirit.
Bittersweet Northland Harvest, brings together kumara — the root of the land — and banana in a playful symphony of textures: tart, cake, mousse, jelly, and caramelised purée. Each layer highlights the versatility of these humble ingredients, brought to life through technique, precision, and a touch of whimsy. A crisp meringue adds lightness, while a bitter chocolate sorbet grounds the dish in richness, balancing sweet, earthy, and darkly decadent notes.
To complete the pairing, we have crafted a cocktail that mirrors the warmth and brightness of the plate. Featuring Black Collar Spiced Rum, orange liqueur, and 144 Islands Vermouth, the drink is bold yet balanced, carrying the same bittersweet harmony as the dessert itself.
This dish and cocktail are more than a pairing; they are a story of place, people, and produce.
